Maui Sunrise Burger

This has to be one of my absolute favorite burgers! The perfect mixture of sweet and savory, fruit and meat. This burger brings you the flavors of the island state even when you can't visit the tropical paradise. Grilled pineapple, caramelized bacon, ham, and apple- are you drooling yet?

3 1/2 Cups Organic All Purpose Flour
1/4 Cup Raw Sugar
1 1/3 Teaspoon Himalayan Pink Salt
2 1/4 Teaspoons Yeast
3/4 Cup Pineapple Juice
1/3 Cup Coconut Oil
1 Free Range Egg (Lightly Beaten)
1/2 Cup Heavy Cream (Warmed)

2 Tablespoons Honey
1 Egg White (Lightly Beaten)

In a mixer with a bread hook attached, dissolve yeast with cream. Let sit for 5 minutes, then whisk in coconut oil, egg, pineapple juice, raw sugar and salt. Turn the mixer on slow and add flour until the dough forms a ball pulling away from the edges of the bowl. Turn dough onto a floured surface and kneed until smooth. Place in an oiled bowl and cover with oiled plastic wrap, leave in a warm place until doubled in size. Punch the dough back down and divide into 12 pieces. Place in a 9x13 baking dish, return to warm place for 30 minutes. Gently brush the glaze over the rolls. Bake at 375 for 23 minutes. Allow to cool for 5 minutes.

Spread honey mustard on one side of the bun and mayonnaise on the other. Set patty on one bun, top with lettuce, ham, bacon and pineapple. Drizzle honey mustard over the top and serve on your favorite tropical plate!
