Tennessee is FINALLY feeling like fall (after nearly a week of rain) which means fall is on our brains- and we've been doing a lot of cooking (what else is there to do when you are stuck inside). We came up with this fun use for our box of bell peppers! Stuffed bell peppers are a favorite around our house, but these just make it a bit more fun.
This recipe is so easy and tastes amazing! We loaded ours with ground beef, rice, and cheese but you really could use anything you wanted to stuff them.
Ingredients:
5 Bell Peppers
1/2 lbs Grass-fed Ground Beef
1 Cup Rice
1 Cup Shredded Colby Jack Cheese
Salt to taste
Pepper to taste
Nutritional Yeast (optional) to taste
Directions:
Cut the top off of the peppers, remove the center being sure not to leave seeds but keep the tops. Cook rice according to directions on the back of the package. Brown meat seasoning to taste. Mix the meat, rice, and cheese and set aside. Bring a pot of water to boil and place peppers inside. Boil for 5 minutes, then remove to a baking dish. Fill peppers with the meat mixture. Return the tops and place in a 350 F oven for 30 minutes or until peppers are desired tenderness. Serve!
