Ingredients:
1 pound of fresh asparagus - with ends removed and the cut in 1" chunks6 slices of nitrate free uncured bacon cooked and chopped
8" pie crust (see here for recipe)
1 egg white for brushing on pie crust
6 whole eggs
1/2 cup half and half
3/4 cup milk
1/8 tsp nutmeg
salt and pepper to taste
6 oz grated Swiss cheese
5 oz grated mild cheddar

Directions:
Trim off the tough ends of your asparagus. Chop the remaining into 1" pieces and steam the remaining until they are tender but not mushy. About 4 minutes or so. Set aside and cool.
Cook and drain the bacon allowing to cool and then chop.
Place pie crust in a deep dish pie pan and brush pie crust with beaten egg white
Sprinkle the bacon, and asparagus over the pie crust
Grate your cheese and sprinkle it over the bacon in your pie crust.
In a bowl beat your remaining eggs, cream, milk, nutmeg, salt, and pepper.
Pour eggs mixture over the cheese and bacon mix.
Bake in a preheated oven at 375 degrees F. uncovered until firm.
Approximately 50 minutes or until a toothpick inserted comes out clean.
Pull out of the oven and let cool for about ten minutes or until it has firmed up. Then slice in wedges, and serve with a nice salad, steamed vegetable and a loaf of French bread.
