Galaxy Cupcake Recipe

We made these a while back for a stargazing party, they are so fun and taste amazing! They are perfect for birthday parties, or for gathering in the backyard to watch the stars.

Ingredients:

Black Food Coloring
Purple Food Coloring
Gold, Black, Silver & White Sprinkles
Eatable Stars
Star Cupcake Toppers
Cupcake Liners (you can use plain ones like we did, or try these fun ones)

Cupcakes

2 1/2 Cups Organic All-Purpose Flour
1 1/2 Cups Organic Raw Sugar
1/2 Cup Cocoa Powder
2 Teaspoons Baking Soda
1/2 Teaspoon Sea Salt
2/3 Cup Olive Oil
2 Tablespoons Bragg Raw Apple Cider Vinegar
1 Tablespoon Vanilla
2 Cups Cold Coffee
1/2 Teaspoon Cinnamon

Directions:

Stir together flour, sugar, cocoa, soda, and salt in a bowl. Make 3 wells in the mixture; pour oil in one vinegar in one and vanilla in another. Pour in coffee and gently stir. Place baking cups on a cookie sheet, and scoop batter into baking cups. Bake at 350, for 18 minutes or until done. Allow to completely cool. Split icing evenly between two bowls. Add purple to one bowl a bit at a time until the desired color is reached. Repeat with the second bowl using black food coloring. Spoon icing into a piping bag, try to keep it to one side of the bag, do the same with the other icing. Ice cupcakes, add sprinkles, and stars.
