Our family loves Mexican food! Seriously don't get between us and some good beans and rice, several years ago we made a trip to Mrs. Cottage's home state California and while their we basked in the pure deliciousness of it. Our family thought we were crazy- but hey when all you got is Tennessee Mexican food you have to enjoy it while you can. So when we aren't basking in sunny California we try to meet those cravings with some good ol' fashion homemade dishes, like this taco casserole.
Ingredients:
12 Corn Tortilla fried flat
1 Can Pinto Beans (warmed)
Small Package Ground Beef Cooked and Seasoned To Taste
4 Cups of Cheese
Your Favorite Salsa

Directions:
Cover the bottom of your casserole dish with tortillas, spoon over it beans meat and cheese. Repeat until you run out of tortillas. Spoon on top meat salsa and bean mixture and cover with cheese. Bake at 350 until cheese is melted and serve.
